I am a vegan baker! [+ banana nut muffins recipe]

Yes :)
I can now consider myself a pro vegan baker [lolz, j/k] x) -I've been baking
vegan cupcakes for looong time, even created few recipes myself, yay!
I have now a mini bakery business. I bake vegan muffins and
cupcakes and sell them to a health food store here in my town and to
my neighbor, that he owns a cafe. This is working really good for me,
and I am earning more experience everyday, because in the future
I want to open a vegan restaurant/cafe....I know I'll do it! I am also finding
more places to sell my muffins.

I love baking, and cooking, and that stuff and I was making cupcakes and muffins
for me and my family and my mom gave me the idea to bake and sell. The idea got big,
now I have people ordering me dozens of cupcakes and muffins. Even non-vegan people!

I think this is one way to show people that a vegan lifestyle doesn't need to
sacrifice taste or food likes! and maybe they'll be thinking on going vegan, who knows! ;)

I will also start baking cupcakes for birthdays soon!

-These are perfect for breakfast-
Makes 12

1 1/3 cups whole wheat flour
1/2 cup+4 tbsp turbinado sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/3 cup ground flax seed
1/2 cup chopped walnuts
3 bananas
1/3 cup canola or vegetable oil
1 tsp vanilla extract
2/3 cup soy, rice or almond milk

Preheat oven to 375 degrees. Mash the banana really well or put them on the blender and blend until no lumps [small lumps are OK] In a large bowl mix together the flour, sugar, baking powder, baking soda, salt, flax seed and walnuts. In a small bowl combine the mashed bananas, oil, the non-dairy milk and vanilla extract. Pour the liquid ingredients into the dry ones and mix together until "just mixed". Spoon into oiled muffins pan (or into paper liners in the muffin pan) and bake for 15-20 minutes.

*These are really great for breakfast, like when you're in a hurry and can't prepare a big breakfast. Also great for putting on your kid's lunchbox for school, or just for a snack ;)
